Pho Chu Lap
Pho Chu Lap brings the soul of Vietnam to Haymarket, built on a family legacy that spans generations.
Named after Luke Nguyen’s father, the stall pays homage to his dedication to perfecting pho, with a broth that’s simmered for 24 hours to unlock deep, layered flavour. Each steaming bowl is crafted with care – delicate rice noodles, tender slices of beef, chicken, or tofu, and a fragrant broth infused with star anise, cinnamon, and charred aromatics. Garnish with fresh herbs, lime, and chilli for a truly personalised touch.
